Brewery of “Bunkajin”
Founded in 1887, the brewery is located in Tosa Yamada Town, Kami City, about a 30-minute drive northeast of Kochi City. This area has long been a hub of commerce and industry.
Currently, the fifth-generation owner, Kosuke Arisawa, personally leads sake production as the master brewer, working in close partnership with his wife to support the brewery.
Arisawa Co., Ltd. is a highly acclaimed brewery, boasting numerous awards, including four consecutive gold medals at the National New Sake Awards and the top prize at the Shikoku New Sake Awards.
Their brewing motto is “Put in the effort until pressing, but do not add anything after pressing.” They carefully press the sake using a traditional wooden press called a fune, bottle the unfiltered sake as genshu, and store it at near-freezing temperatures after pasteurization to pursue the original deliciousness of sake.
