Brewery of “Katsuyama” and “Sensho-Masamune”
Founded in 1688, it is the only existing sake brewery that served the Date clan of the Sendai domain, with a mission to not only brew sake but also pass on the 800-year history and tradition of the Date family to the next generation.
At the same time, the brewery is innovative, opening directly managed restaurants in Paris and Florence (now closed), and operating the leading culinary school in the Tohoku region, wedding venues, and multiple fine dining restaurants in Sendai.
Katsuyama values terroir, a term from the wine industry meaning “soil.” The water that springs from Izumigaoka flows through geological layers over many years, eventually irrigating rice fields and growing rice, while also being drawn from the brewery’s well as Katsuyama’s brewing water.
Employing luxurious pressing methods using a centrifuge, creating sake modeled after noble rot wines, and even crafting sake that pairs well with cigars, Katsuyama’s innovative sake offers new value perspectives, aiming for harmonious pairings with cuisines from around the world.

Origin of the Brand Name | There are two theories behind the name Katsuyama. One suggests that the characters “Katsu” (victory) and “Yama” (mountain) were chosen to symbolize taking as many victories as mountains for the samurai. The other theory is that it was named after the Katsuyama Mage, a popular samurai-style hairdo among women in the early Edo period. |
Major Awards | In 2009, “Akatsuki” won a gold medal at the International Sake Challenge. In 2010, three varieties were served in the business class of ANA international flights. In 2012, “Senchou Masamune Tokubetsu Junmai” won first place in the Brewer’s Judging category at the SAKE COMPETITION. In 2013, “Moto” was included in the wine list of Spain’s three-star restaurant El Celler de Can Roca, which ranked first in The World’s 50 Best Restaurants. In 2015 and 2016, “Ken” won first place in the Junmai Ginjo category at Japan’s largest sake competition, SAKE COMPETITION, for two consecutive years. In 2016, “Akatsuki” received 95 points from Parker Points (ranked 2nd out of 800 varieties). |
Commitment | By brewing at a luxurious slow pace of one tank per week, they achieve meticulous craftsmanship with attention to every step of the process. For pressing premium sake, they use a specially modified centrifuge, spinning the moromi (fermented mash) at high speed to extract only the pure essence of the sake. Katsuyama’s next-generation sake, aimed at pairing with cuisines from around the world, continues to break conventional norms and propose new value perspectives. |
